Based in a Grade II listed building, the Hall's events venue consists of seven rooms and a garden where they have hosted events including weddings, conferences, BBQ's and fashion shows. THE ROLE: An exciting opportunity has arisen for an experienced Sous Chef. The purpose of the position is to assist the Head Chef with all catering events and deputise the role whilst not in attendance, ensuring standards are maintained in line with the Head Chef's directives. Key Responsibilities to include:- The production and delivery of quality food Assist in the management of the production of all meals using fresh, chilled, frozen and ambient produce in both the present and or temporary locations, whilst adhering to the consumer's dietary requirements Assist in managing all actions and work methods, ensuring compliance within the department to the Health and Safety Act, Unit Hazard Analysis Procedures and Manual Handling Policy To provide input and support in producing menu costing and recipes using the In-house IT systems Assist in the management of all personnel and equipment in their area of responsibility Manage the supervision/upkeep of the kitchen fabric and its equipment Assist in the Driving of Business Development Demonstrate a high level of culinary skills required for the production of food in all areas within the kitchen using the relevant principles and methods of cookery Assist and develop Workplace Training Ensure that all food handling is in compliance with Food Safety Regulations and the Principles of Personal Hygiene Manage the Health and Safety Policy within the department and conduct inductions when required Assist and support Menu tastings when required Ensure the correct recovery, storage and disposal of food Account for commodities and its security Discuss and compile with the Head Chef duty and leave rotas Ensure and manage the correct storage of food Report and Identify to the Head Chef equipment faults that impact on the preparation and cooking of food Monitor, identify and request commodities and stores To discuss and suggest to the Head Chef all kitchen/catering equipment that provides innovation and economies of scale Assist in any other additional duties that are beneficial to the organisations objectives In discussion with the Head Chef asses all catering commitment requirements To be present and aid debriefing and briefing of the catering staff In association with the Head Chef, support Menu Planning/Development THE CANDIDATE: The successful candidate will be smart, well spoken, organised, friendly, enthusiastic, flexible, reliable, determined, self-motivated, literate and numerate, passionate about food, desire to both learn and instruct. Whilst possessing strong leadership skills. Have a good range and understanding of catering techniques/methods used within the workplace and have a natural ability to develop and nurture chefs within the department.
